I have been in the food industry since my twenties. In 1985 I returned to New Zealand from Sydney and set up my own restaurant in Hataitai, Wellington “The Alliecat”, which paved the way for suburban BYOs in Wellington.
After 8 successful years as owner/Chef I moved on to participate in the setting up and to be the Head Chef at the newly established 'CBD' restaurant in the heart of our beautiful city. I then was offered an amazing opportunity to become Chef at the British High Commissioner's historic private residence where I worked for 18 years.
During my time at the BHC I worked with six High Commissioners, each with their own culinary style and requirements. Apart from family meals, there was very regular 'High End' entertaining of Diplomats, Government Ministers, Foreign and local business Dignitaries.
